Operation "I love Brie cheeses! " returns this autumn during the National Gastronomy Festival and will last for two months in restaurants in the Seine-et-Marne region.
For this 5th year, cheese and local produce lovers, and food lovers in general, are invited to meet at the tables of almost 70 participating restaurants.
Born on a family farm near Meaux, Xavier helped his parents make farmhouse cheeses from an early age. From his agricultural roots, he has inherited both good sense and a love of local produce. After gaining first-hand experience with a local cheese maturer, he joined the Lactalis Group in 1997 where he soon decided to pursue traditional products, and the specialised circuit of cheese and dairy retailers and top restaurant chefs.
In contact with the best specialists in the profession, he quickly became passionate about his job and earned recognition when he participated successfully in the "Meilleur Ouvrier de France" competition. Over time he has become a true label of French quality, recognised both in France and abroad. A strong ambassador of French cheese culture, Xavier creates gourmet cheese boards and demonstrations that are as magnificent as they are surprising.
Enthusiastic about his products, he likes to share his know-how and his expertise on France's cheese and culinary heritage. So naturally he has agreed to join the "I love Brie cheeses!" adventure.
